When fruits or veggies are peeled the Enzyme are exposed to oxygen in the air & turns it brown, it can be prevented by soaking or brushing with a acidic fruit like lemon or some vinegar..

Wouldn't have been better if the dirt on the cassava were washed first then air dry before peeling? Now the dirt adhere to these cassava and now it has to be washed.
